Windows Server 2012 VPN w/Single NIC- DHCP Scope Question

I set up my first RRAS VPN server with Windows Server 2012 today, and it works fine for my internal testing, with two minor issues that I need to learn how to correct...

When connected, the internet on the client computer no longer works unless I uncheck the option in the VPN config on the client computer to NOT use the remote default gateway for internet access. Is this the normal way for these setups to be done, or is there something I can do server side to force connected clients to use their own default gateway for internet access and the VPN connection to "local/remote" resources only?

Second, the VPN is handing out IP's in the same scope as the domain. That may not be that big of a deal, but this particular domain is on a 192.168.1.X subnet, which is VERY common for household routers. How do I configure the server to hand out a different range of IPs for the VPN and still connect local resources via NAT?
