Always On VPN - Poor Performance over WiFI?

With the VPN using IKEv2 and plenty of bandwidth I am noticing that performance over WiFi is not good at all.

Scenarios:

Mobile Hot Spot: Bandwidth speed test 25Mbps down 16Mbps up. averaging around 100-110ms response times when pinging internal resources. File transfers are anywhere from 80KBps - 800KBps.

Home WiFi: Bandwidth 100Mbps down 100Mbps up. File transfers are anywhere from 80KBps - 800KBps.

Same home connection but using a wired connection: transfers top out at almost the speed of internet connection when the internal resources are located (this is good as I am seeing anywhere from 3MBps - 6MBps)

I'm trying to make sense of why the connectivity seems so terrible over WiFi even when the underlying bandwidth is great. Latency perhaps? Though other things using the same WiFi connections without the tunnel run as expected.

I also notice that it seems like the file transfer is happening in chunks.. like a chunk will finish and then it will do another chunk and finish.

Does this seem like an issue with IKEv2 or the tunnel? Or is is more likely latency? I was under the impression that IKEv2 was supposed to perform better than SSTP also.
